Welcome to ‘A Locanda tù Marchese’. , Masseria Urbana with trattoria and braceria in Salento, in Matino in the province of Lecce.
With us the real protagonist is the poor cuisine of the past: and we start from the SEED!
In our farm, we cultivate all the raw materials you will find in our dishes, we study and elaborate ancient and modern preservation methods that can preserve genuine flavours.
And that’s not all: we cook on a wood-burning cooker, a huge kitchen in our building that gives life to the flavours in our piñatas. The bread is baked on a wood-burning cooker, the chunks and vegetables on a cast-iron cooker! Because for us, one way to make Salento known is to smell those scents and taste those flavours, which remind us of our history, our roots.
In addition, the BRACERIA area offers different cuts of local and non-local meats, matured in Dry Aeger (meat ripener), and flavoured with spices, sauces and side dishes.

Celebrating the Mediterranean diet and the Matino and Salento tradition
At ‘A Locanda tù Marchese’, a typical Salento trattoria, guests and non-guests of our Masseria in Matino will find traditional Apulian and Salento dishes that refer to the dictates of the Mediterranean Diet. Since 2010, this set of simple dishes, common to the peoples of the Mediterranean, has been ‘Intangible Cultural Heritage’, recognised and protected by Unesco. The special combination of legumes, cereals, vegetables, meat and fish creates a mix of flavours and smells, perfectly able to tell the story of a territory.
Our collaboration with Coldiretti farmers and breeders within the Campagna Amica project and the rich production of our farm is a further guarantee of the seasonality and genuineness of the ingredients, indispensable factors of the Mediterranean Diet.
Who is the lady on the left?
Nonna Tetta, who better than she together with Chef Daniele, with her skilful hands, can take care of these exceptional ingredients. Professionalism and ancient knowledge of housewife, son-in-law and mother-in-law, come together to offer generational recipes, to savour the Salento of yesteryear made of waiting, care and study of local raw materials.
