To Eat Well You Must Care for the Land
At the masseria we don't buy anything we can produce ourselves. The olive oil is ours, the tomatoes are ours, the pasta is made fresh every morning. The season dictates the menu — not the other way around.
Every dish tells the story of the territory: sautéed chicory, orecchiette with white ragù, fava beans with wild greens, fried pittule — the simultaneously poor and rich cuisine of the Salentine countryside.
