From the Earth to the Plate: 3 Special Salads for Lizzie (and for Summer in Salento)

There are weeks that leave a mark — weeks made of encounters, long conversations and, above all, a deep love of good food. That is exactly what happened during the week we spent here at the masseria in Matino together with our latest group of guests. Among the many shared moments, one of the most vivid memories is linked to the freshness of our table and to the questions of Lizzie, who was utterly charmed by our salads.

Those who know me know that for me a salad is not a simple side dish, but a true blank canvas. The months of April, May and June here in Salento are a period of extraordinary fertility: the land bursts with colour and fragrance, and every day offers new inspiration. Many of the salads we enjoyed together were improvised — born spontaneously from whatever my father Daniele had brought in fresh from the fields of our farm that very morning.

I cannot remember them all — the beauty of zero-kilometre cooking lies precisely in that wonderful spontaneity! — but three have stayed with me, etched in the heart (and on the palate). Dear Lizzie, this article is dedicated to you, with the hope that you will recreate them at home and find, forkful after forkful, the taste of our Salentine summer.

1. The Traditional Field Salad

A great summer classic — hearty, refreshing and perfect for a light yet satisfying lunch.

  • Base ingredients: Green beans, cherry tomatoes, boiled potatoes cut into cubes, red Tropea onion.
  • The extra touch: For an even more Mediterranean flavour, you can add a handful of black olives.
  • The chef's secret: Slice the Tropea onion paper-thin and let it rest in ice-cold water before combining it with the other ingredients. This trick draws out the sharp acidity, leaving the onion crisp and easy to digest.
  • The dressing: Beautifully simple. Excellent extra virgin olive oil, wine vinegar and a pinch of salt. Nothing more.

2. The Citrus Freshness Salad

An unexpected pairing that plays on the contrast between the hearty texture of the beans and the brightness of citrus.

  • Base ingredients: White beans, orange cut into pieces, thinly sliced fennel and fresh mint leaves.
  • The chef's secret: When you supreme the orange, make sure to remove all of the white pith (the albedo) to avoid any bitter notes, leaving only the pure sweetness of the flesh.
  • The dressing: A wonderfully fragrant emulsion of fresh orange juice, olive oil, salt and a generous grind of black pepper.

3. The Rustic Lentil Salad

Substantial and aromatic, full of contrasts between the sweetness of the carrot and the savoury depth of the sun-dried tomato.

  • Base ingredients: Lentils, hard-boiled egg, sun-dried tomatoes cut into strips, julienned carrots and fresh basil.
  • The dressing: Extra virgin olive oil, fresh lemon juice, black pepper and just a little salt — remember that sun-dried tomatoes are already naturally quite salty!
